Cinnamon Apple Oat Muffins

1 medium to large apple peeled and diced
1 cup all purpose flour
¼ cup almond flour
½ cup rolled oats
⅓ cup cane sugar
2 tsp baking powder
½ tsp baking soda
½ tsp salt
⅓ cup melted coconut oil (can sub olive oil)
⅓ cup oat milk
½ cup unsweetened applesauce
1 tsp cinnamon
1 tbsp brown sugar
A dash of nutmeg
Preheat oven to 375F.
Peel and dice the apple. Add it to a pot along with the 1 tbsp brown sugar, cinnamon and nutmeg and cook on medium to low heat for 7 minutes.
Meanwhile, in a bowl add the flours, oats, sugar, baking powder, baking soda, salt and whisk.
Melt your coconut oil and add that to the bowl along with the oat milk and the applesauce. Gently mix until combined.
Pour your apple mixture into the batter and gently fold until incorporated.
Line a muffin tray with liners and add the mixture to the cups. I was able to make ten muffins with mine. Enjoy!
