Vegan Date Brownies with a Chocolate Ganache

Vegan Date Brownies with a Chocolate Ganache

Difficulty: Intermediate Total Time: 40 min Bake Time: 25min



Ingredients:


  • 1 cup dates (softened in hot water)

  • ¼ cup Cocoa Powder

  • ¾ cup Oats

  • ½ cup Apple Sauce

  • 1 tbsp Chocolate Oat Milk (plain also works)

  • 2 tbsp nut butter (of your choice)

  • ½ tsp baking soda

  • ¼ tsp salt

  • ½ tsp vanilla extract

  • ¼ cup chocolate chips


For the Ganache:


  • ¼ cup chocolate oat milk (plain also works)

  • 1 cup chocolate chips or chunks

  • ½ cup powdered sugar

  • 2 tbsp coconut oil (melted)



Method:


  1. Preheat your oven to 350F. Then line a 4x8 pan with parchment paper.

  2. Boil water and pour over dates to soften.

  3. Add Oats to a blender and blend until you have a flour consistency.

  4. Add in your apple sauce, cocoa powder, baking soda, salt, nut butter, vanilla and blend.

  5. Once the dates have softened add them along with the splash of chocolate oat milk to the blender and blend again. You may have to stop occasionally to scrap the sides.

  6. Once your mixture is well combined, stir in your chocolate chips.

  7. Scoop mixture into your pan. (The mixture will be quite thick, spread it as best as you can so it is even)Place in the oven for 25min.

  8. As that bakes make your ganache. Heat ¼ cup chocolate oat milk in the microwave or on the stove top. Once hot, place the chocolate chips in the warm milk and let them melt for 2 min. Stir.

  9. Add the melted coconut oil to your melted chocolate and slowly stir in your powdered sugar. Place in the fridge to set until your brownies are done (the coconut oil helps thicken it up in the fridge but you can also add more powdered sugar if it’s still thin)

  10. After 25min remove your brownies from the oven. Let cool for 15 min.

  11. Once cool, spread chocolate ganache on top. Enjoy!
