Vegan Peppermint Patties

Vegan Peppermint Patties


Difficulty: Easy Total Time: 1hr









Ingredients:

1 and ¼ cup vegan chocolate chunks

1 cup powdered sugar

1 tbsp coconut oil melted

½ tsp peppermint extract

2 tbsp oat milk


Equipment:

Chocolate Moulds (see notes for more mould ideas)


Method:

  1. Start by melting your chocolate. Place a metal or glass bowl over a pot of water on low heat. Stir constantly.

  2. Thinly coat the chocolate moulds with chocolate. Cover with parchment paper and place in the freezer for 10 min.

  3. Next, make the filling. Add powdered sugar, melted coconut oil, peppermint extract and oat milk to a bowl and mix until you get an icing consistency.

  4. Remove the moulds from the freezer and add in the filling. Cover with the remaining chocolate. Place the chocolates in the freezer for at least 20mins.

  5. Remove from the moulds and enjoy! Optional: decorate the peppermint patties! I crushed vegan candy canes, added a small dot of melted chocolate to the tops of the chocolates and pressed them into the crushed candy cane pieces. Sooo good!
