Vegan Tiramisu



So excited to be sharing this vegan tiramisu inspired dessert with you all! Tiramisu is one of my favourite desserts of all time and I'd been wanting to develop a vegan version for a while now!



 

Vegan Tiramisu

Total Time: 2-3hrs



Ingredients:


  • Two bags of Made Good Vanilla cookies or your favourite plain cookies

  • Espresso (or strong coffee)

  • Water (to make espresso)

  • 1 and ½ cups soaked cashews

  • Vanilla extract

  • ½ cup and 1 tbsp of canned coconut cream

  • 2tbs maple syrup

  • 1 tsp turbinado sugar

  • Cocoa powder


Method:

  1. Soak cashews in hot water for 1-2 hours or until soft. As they soak make your espresso or very strong coffee, then let that sit in the fridge until cool.

  2. Add your cashews to a blender along with coconut cream, two splashes of vanilla extract, maple syrup and brown sugar. Blend until smooth and not grainy. If your blender is struggling (like mine was), add in a few splashes of coconut cream or even oat milk until all the cashews are smooth.

  3. Once the vegan cream is done and your espresso has cooled, it's time to assemble.

  4. Grab a mason jar, a cocktail glass or trifle dish. Dip your vegan cookies into the espresso, but don’t let them sit too long and get soggy, and then place them down in your dish until the bottom is lined with espresso soaked cookies.

  5. Layer with the cashew cream until the cookie layer is covered then repeat until there are two layers of both cookies and cream. Top with cocoa powder and some extra cookies. Place in the fridge for at least 30 min before enjoying!
